Scatter ginger and mushrooms over chicken. Place in a bamboo steamer and steam for8-9 minutes or until cooked.
2. Steamed Rice
Steam your rice with vegetable or meat broth so as to infuse a natural flavor into it, instead of plain water. You may also add a subtle flavor by lining the bamboo steamer with banana leaves, grape leaves or corn husks. This is done to help save time. Infuse your rice with vegetable flavors by steaming corn, carrots, beans, asparagus, peas, and other vegetables in a separate basket below your rice.
3. Tenderloin Steak
You can also cook pieces meat in bamboo steamers. Slice small cuts of tenderloin steak and steam them for about 8 minutes, until they are medium-rare. Drizzle some pork wine over the meat when they are done.
4. Basic steamed fish
prepare the wok for steaming then rinse the fish fillets and pat dry with paper towels.
Ina small bowl, whisk the rice wine (mirin) or sherry, sugar, salt and sesame oil.
Place the fish fillets on a deep, heat-proof plate that will fit inside the steamer basket.
Pour the rice wine mixture over the fish. Sprinkle with the chopped green onion then cover and steam the fish over high heat until the fish is opaque and flakes easily with a fork (10-15 minutes). Then serve hot, garnished with the chopped cilantro and lemon wedges.
- Always handle the steamer and its contents with care as they will be very hot. Use oven mitts or tongs to move things about. Steam and boiling water can cause nasty burns, so always open the lid of the steamer away from you and always remember to protect your hands when uncovering your steamer as steam heat is intense and always open the lid away from the direction of your face.
- You can keep food from sticking at the bottom of your bamboo steamer by first lining them with parchment paper, edible leaves, or cheesecloth.
- Always check your ingredients so that they don't overcook.
- During the cooking process, make sure the water in the pan is up to the rim of the bamboo steamer. And if the water level is too low, top it up with hot water to prevent the temperature from dropping drastically.
